BACKGROUND
The Winemakers Coup de Gras is our winemakers, ala carte, anything goes, make a unique reserve wine for the ages.
Sonoma Coast Grenache and Syrah were perfect for this inaugural wine.
Known for its adobe soils along with its Pacific wind and fog influences that keep an almost constant breeze during the warm days and cold coastal nights creates intense fruit flavors while retaining its structure and bright fruit flavors.
WINEMAKING
Night harvested and delivered before day break. We sorted meticulously then crushed and sent to stainless cooled tanks to rest and cold soak prior to yeast inoculation for 4 days.
The wines were fermented slowly over 2 weeks with a maximum temperature of 86°F to preserve the color and intense fruit aromas. A averaged total of 18 days on the skins. Aged in a blend of new and lightly seasoned French oak barrels for 19 months.
Each varietal is constantly monitored to insure tannin balance is achieved. We use a mixture of several of the best cooperages including: Leroi, Nadalie, Gamba, Quintessence and Mercurey.
TASTING NOTES
A blender full of fresh strawberries and plums with accents of anise, clove, bacon fat, oregano.
Loads of cherry and juniper berry compote, dried oregano, lavender, citrus peel and all spice. Built for aging, this wine will continue to get better for many years to come.
