Paso Robles is the largest AVA and is known for its extreme heat / cold variances with average highs during the growing season reaching 105 °F and 40-50°F  on average most nights.

A small district within the AVA, The Highlands District is know for its high elevation (above 1600 feet, having the least amount of rain fall and its sandstone/clay soils (high limes stone content) the perfect combination decreases the vines vigor creating intense flavor concentration and intensity with full ripeness while retaining naturally high acidity levels for balance and structure.

The grapes were picked at the peak of ripeness during the early morning hours to preserve maximum fruit expression. They were transported in a refrigerated truck to our winery in Sonoma where the fruit was sorted meticulously then crushed and sent to stainless cooled tanks to rest and cold soak prior to yeast inoculation for 3 days.

The wines were fermented slowly over 2 weeks with a maximum temperature of 86°F to preserve the color and intense fruit aromas. An averaged total of 22 days on the skins. Aged in a blend of new and lightly seasoned French oak barrels for 21 months.

Each varietal is constantly monitored to insure tannin balance is achieved. We use a mixture of several of the best cooperages including: Leroi, Nadalie, Gamba, Quintessence and Mercurey.

Intense boysenberry, blackberry jam and powerful aromas of rose petals on the nose with hints crushed clove, pine needle and thyme spices.

Elegant and dense upon entry, blackberry, ripe plums and  chocolate mousse dominate with hints of nutmeg, fresh cinnamon and black pepper. This is a fully bodied power driven with big soft tannins. Built to age gracefully for several decades.
