Winemaking - Our 2012 Cabernet Signature blend was harvested in the moonlit sky of a chilly dew-soaked fall morning. 2012 was a perfect growing season and harvest in the Napa Valley, with a lengthy stretch of warm days and cool, often foggy nights during the long summer months. The abundance of perfectly ripe grapes, with a smooth balance of acids and sugars, brought exceptional quality fruit to the crush pad.
Harvest Notes - The grapes were sorted and destemmed into a fermentation tank where they rested and were soaked for 6 days- a total of 46 days on the skins . After a warm fermentation the wine went through an extended maceration for 28 additional days, then was aged in French Oak with traditional egg white fining to soften the tannins.
What Does It Taste Like? - A dark, elegant beauty. Darkness matters and the proof is in this wine. Enticing aromas of black cherry, toasted Oak and vanilla invite you to take a closer look. The lush entry teases the palate with a liquid feast of rich and concentrated black fruit. Cassin and dark chocolate, framed by velvety tannins. There is structure. Yet it's perfectly balanced, With flavors that linger long after the glass is empty.
What Should Pair It With? - A dry aged ribeye with a rich blue cheese butter, garlic and rosemary encrusted rack of lamb, or creamy cheddar polenta.
